Smoky Bourbon BBQ Bacon-Wrapped Meatloaf Cupcakes are a delightful and creative twist on a classic comfort food, featuring savory ground beef, smoky seasonings, and creamy mashed potato frosting.

  • 3 cup mashed potatoes (homemade or prepared)
  • 2 tablespoon butter
  • 2 to 4 tablespoon warm milk (as needed for piping)

Instructions

  1. Preheat your oven to 375°F and grease a 12-cup muffin tin well. In a bowl, combine the ground meat, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, BBQ sauce, smoked paprika, salt, and pepper, mixing just until everything is evenly incorporated.
  2. Divide the meatloaf mixture into the prepared muffin cup, filling them about 3/4 full. Using your fingers, gently press a small dip into the top of each meatloaf “cupcake.”
  3. Carefully wrap a slice of bacon around each meatloaf cupcake, tucking the ends down along the sides or underneath. If needed, use two slices of bacon per cupcake to ensure full coverage.
