- Preheat your oven to 375°F and grease a 12-cup muffin tin well. In a bowl, combine the ground meat, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, BBQ sauce, smoked paprika, salt, and pepper, mixing just until everything is evenly incorporated.
- Divide the meatloaf mixture into the prepared muffin cup, filling them about 3/4 full. Using your fingers, gently press a small dip into the top of each meatloaf “cupcake.”
- Carefully wrap a slice of bacon around each meatloaf cupcake, tucking the ends down along the sides or underneath. If needed, use two slices of bacon per cupcake to ensure full coverage.
- Brush the tops of the bacon-wrapped meatloaf cupcakes with a bit of extra BBQ sauce. Bake for 25 to 35 minutes, or until the meatloaf is cooked through and the bacon is beautifully browned.
- Once the meatloaf cupcakes have baked, carefully drain any excess grease if needed. Allow them to rest for 5 minutes before piping the creamy mashed potato “frosting” onto each one in a decorative swirl.
