Description

Smoky Bourbon BBQ Meatloaf Cupcakes are the ultimate comfort food with a twist. By transforming the classic meatloaf into individual, bite-sized servings and infusing them with the irresistible flavors of bourbon barbecue sauce, you’ve created a dish that’s sure to delight your family and impress your guests.

Ingredients

Scale
  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup bourbon BBQ sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cup mashed potatoes
  • 2 tablespoon butter
  • 1/4 cup milk or cream
  • Salt & pepper, to taste

Instructions

1. Preheat your oven to 375°F. Lightly grease a muffin tin.

2. In a large bowl, combine the ground beef, ground pork (if using), onion, garlic, breadcrumbs, milk, egg, bourbon BBQ sauce, smoked paprika, chili powder, salt, and black pepper. Mix gently until just combined.

3. Divide the meatloaf mixture evenly into the prepared muffin cup, pressing down lightly to shape them into cupcake-like forms.

4. Bake for 20–25 minutes, or until they’re cooked through and the tops are nicely browned.

5. During the last 5 minutes of baking, brush the tops of the meatloaf cupcakes with the extra bourbon BBQ sauce.

6. While the cupcakes are baking, mix the mashed potatoes with the butter, milk or cream, salt, and pepper until smooth and creamy.

7. Once the meatloaf cupcakes are cooked, let them cool slightly. Top each cupcake with the fluffy mashed potato “frosting.”

8. For an extra touch of smoky flavor, sprinkle a pinch of smoked paprika over the mashed potato topping. Serve warm.

Notes

Consider serving alongside roasted garlic mashed potatoes, crispy roasted Brussels sprouts, or a fresh coleslaw. Pair with a bourbon cocktail or iced tea for a delightful meal.
