Ingredients
- 1 1/2 pound cooked protein
- 2 cup cooked Spanish rice or cilantro lime rice
- 1 can (15 ounce) refried beans or black beans, drained and rinsed
- 1 cup shredded Mexican cheese blend
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped
- 4 large flour tortillas (12-inch)
- 3 tablespoon olive oil
- 3 tablespoon all-purpose flour
- 3 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- a pinch of salt
- 2 cup chicken or vegetable broth
- 1 can (6 ounce) tomato paste
- 1 tablespoon apple cider vinegar
- 2 cup shredded Mexican cheese blend for topping
- 1/2 cup shredded cheddar cheese for topping
- 1/4 cup sliced green onions for topping
- 1/4 cup fresh cilantro, chopped for topping
- Sour cream for serving
- Diced avocado or guacamole for serving
Instructions
1. Preheat your oven to 375°F and lightly grease a 9×13-inch baking dish.
2. In a medium saucepan, heat the olive oil over medium heat. Whisk in the flour and cook for 1 minute to create a roux. Add the chili powder, cumin, garlic powder, oregano, and a pinch of salt. Cook for an additional 30 seconds, stirring constantly.
3. Gradually whisk in the broth, making sure no lumps form. Stir in the tomato paste and apple cider vinegar, whisking until the sauce is smooth. Bring to a simmer and cook for 8-10 minutes, stirring occasionally, until thickened.
4. Lay a tortilla flat and add about 1/2 cup of rice down the center. Top with about 1/3 cup of protein, 1/4 cup of beans, a sprinkle of cheese, a dollop of sour cream, and a pinch of cilantro. Roll tightly and place seam-side down in the baking dish.
5. Pour the warm sauce evenly over the burritos and sprinkle with shredded cheeses. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10-15 minutes until cheese is melted and bubbly.
6. Let rest for 5 minutes, then top with sliced green onions and fresh cilantro. Serve with extra sour cream and diced avocado or guacamole.

Consider using whole wheat or low-carb tortillas for a healthier version. Use lean proteins and incorporate vegetables in the filling. Reduce oil in the sauce or use low-fat cheese to cut calories.
