- 4 pieces boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 medium green bell pepper, chopped
- 1 can (10.5 ounce) cream of chicken soup
- 1 can (10.5 ounce) cream of mushroom soup
- 15 ounce chicken broth
- 1 cup long-grain white rice, uncooked
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 350°F.
- Season the chicken breasts with salt, black pepper, paprika, and garlic powder on both sides.
- Heat the olive oil in a large skillet over medium-high heat, then sear the chicken for 2-3 minutes per side until golden brown. Remove the chicken and set it aside.
- In the same skillet, sauté the chopped onion and green bell pepper for about 5 minutes, scraping up any browned bits from the chicken. Add the minced garlic and cook for 1 more minute.
- In a large mixing bowl, combine the cream of chicken soup, cream of mushroom soup, and chicken broth. Mix well, then stir in the uncooked rice until fully incorporated.
- Spray a 9×13 inch baking dish with cooking spray, then spread the sautéed vegetables evenly across the bottom.
- Place the seared chicken breasts on top of the vegetables and pour the soup and rice mixture over the top.
- Cover the baking dish tightly with aluminum foil and bake for 60 minutes, or until the rice is tender and the chicken is cooked through.
- Let it rest for 5-10 minutes before serving.
