  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 medium green bell pepper, chopped
  • 1 can (10.5 ounce) cream of chicken soup
  • 1 can (10.5 ounce) cream of mushroom soup
  • 15 ounce chicken broth
  • 1 cup long-grain white rice, uncooked
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F.
  2. Season the chicken breasts with salt, black pepper, paprika, and garlic powder on both sides.
  3. Heat the olive oil in a large skillet over medium-high heat, then sear the chicken for 2-3 minutes per side until golden brown. Remove the chicken and set it aside.
  4. In the same skillet, sauté the chopped onion and green bell pepper for about 5 minutes, scraping up any browned bits from the chicken. Add the minced garlic and cook for 1 more minute.
  5. In a large mixing bowl, combine the cream of chicken soup, cream of mushroom soup, and chicken broth. Mix well, then stir in the uncooked rice until fully incorporated.
  6. Spray a 9×13 inch baking dish with cooking spray, then spread the sautéed vegetables evenly across the bottom.
  7. Place the seared chicken breasts on top of the vegetables and pour the soup and rice mixture over the top.
  8. Cover the baking dish tightly with aluminum foil and bake for 60 minutes, or until the rice is tender and the chicken is cooked through.
  9. Let it rest for 5-10 minutes before serving.
