A cozy autumn delight that combines warm spices, sweet apple cider, and a tender, cake-like texture.
Ingredients
- 2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground allspice
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 cup apple cider
- 1 teaspoon vanilla extract
- 1/4 cup granulated sugar (for topping)
- 1 tablespoon ground cinnamon (for topping)
- 1/4 cup apple cider (for topping)
- 2 tablespoon softened butter (for topping)
Instructions
1. Preheat the oven to 350°F and grease and flour a 9×5-inch loaf pan.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice.
3. In a large bowl, beat the melted butter, granulated sugar, brown sugar, eggs, apple cider, and vanilla extract until smooth.
4. Gradually incorporate the dry ingredients into the wet ingredients, mixing just until combined.
5. Pour the batter into the prepared loaf pan and bake for 50–55 minutes, or until a toothpick inserted comes out clean.
6. While the loaf bakes, mix the granulated sugar and cinnamon in a small bowl. In another bowl, combine the reserved apple cider and softened butter.
7. Allow the loaf to cool in the pan for 10 minutes before removing it. Brush the top with the apple cider-butter mixture and sprinkle with the cinnamon sugar topping.
8. Slice and enjoy with your favorite fall beverage.
Notes
This loaf can be customized by using gluten-free flour or adding nuts for extra texture.
