Ingredients
Scale
- 4 boneless skinless chicken breasts (6 to 7 ounce each)
- 2 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 3 fresh jalapeños, seeded and finely diced
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 2 tablespoon unsalted butter
- 1/2 cup grated Parmesan cheese
- 2 tablespoon fresh lime juice
- 1/4 cup fresh cilantro, chopped
Instructions
- Start by patting the chicken breasts dry and seasoning both sides with the salt, pepper, paprika, and garlic powder.
- Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 5 to 6 minutes per side, or until they are golden brown and cooked through, reaching an internal temperature of 165°F. Remove the chicken from the skillet and set it aside on a plate.
- Reduce the heat to medium and add the butter to the skillet. Toss in the diced jalapeños and cook for 2 to 3 minutes, until they start to soften. Then, add the minced garlic and cook for an additional minute.
- Pour the chicken broth into the skillet and bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan. Allow the broth to simmer for 3 to 4 minutes, reducing it by half. Stir in the heavy cream and let the sauce simmer for another 3 to 4 minutes, until it starts to thicken slightly.
- Reduce the heat to low and stir in the grated Parmesan cheese until it’s melted and the sauce is smooth. Add the fresh lime juice and most of the chopped cilantro, reserving some for garnish.
- Return the seared chicken breasts to the skillet and spoon the creamy sauce over each piece. Simmer for 1 to 2 minutes to allow the chicken to heat through and absorb the flavors of the sauce.
- Garnish the Spicy Jalapeño Chicken with Creamy Sauce with the remaining cilantro and extra jalapeño slices, if desired. Serve the dish hot over a bed of rice, pasta, or your choice of side dish.
Notes
For a healthier alternative, substitute low-fat or non-fat heavy cream for regular heavy cream. You can also use boneless, skinless chicken thighs or plant-based proteins like tofu or tempeh.
