  • 2 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 jalapeno peppers, seeded and finely chopped
  • 1 red bell pepper, chopped
  • 1 can (14.5 ounce) diced tomatoes, undrained
  • 1 can (15 ounce) black beans, rinsed and drained
  • 1 can (15 ounce) corn, drained
  • 1 cup chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste

Instructions

1. Prepare the chicken by patting it dry with paper towels and seasoning it generously with salt and pepper.

2. Next, heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chopped onion and sauté until softened, about 5-7 minutes. Stir in the minced garlic and jalapenos, and cook for an additional minute until fragrant.

3. Now, it’s time to brown the chicken. Add the cubed chicken to the skillet and cook until browned on all sides. Once the chicken has a nice sear, toss in the chopped red bell pepper and cook for 3-5 minutes until slightly softened.

4. To bring all the flavors together, add the diced tomatoes, black beans, corn, and chicken broth to the skillet. Stir well, then sprinkle in the chili powder, cumin, smoked paprika, and cayenne pepper (if using). Season with salt and pepper to taste.

5. Bring the mixture to a simmer, then reduce the heat to low, cover the skillet, and let it cook for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
