Instructions

  • Prepare the filling: Heat olive oil in a pan over medium heat. Sauté the minced garlic until fragrant. Add spinach and cook until wilted. Set aside to cool.

  • Mix the filling: In a bowl, combine cooled spinach, feta cheese, cream cheese, lemon zest, lemon juice, and dill. Season with salt and pepper to taste.

  • Prepare the salmon: Lay the salmon fillet flat on a clean surface. Spread the spinach and feta mixture evenly over the top.

  • Roll and secure: Gently roll the salmon up, starting from the wider end. Secure the roll with toothpicks or kitchen twine.

  • Bake: Preheat the oven to 375°F (190°C). Place the salmon pinwheels on a baking sheet lined with parchment paper. Bake for 15–20 minutes or until the salmon flakes easily and reaches an internal temperature of 145°F (63°C).
