  • 1 pound sweet potatoes, diced
  • 2 cup bell peppers, sliced
  • 1/2 cup onion, sliced (optional)
  • 1 tablespoon oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning or dried oregano
  • 2 tablespoon soy sauce or coconut aminos (optional)
  • Fresh parsley or cilantro for garnish (optional)

Instructions

  1. Microwave the diced sweet potatoes for 4 to 6 minutes until slightly tender but still firm.
  2. Heat 1 tablespoon of oil in a large skillet over high heat. Add the seasoned steak in a single layer and sear for 2 to 4 minutes, flipping occasionally until browned on the outside.
  3. Add more oil to the skillet and sauté the sweet potatoes for 6 to 8 minutes until browned and tender. Then add the bell peppers and onion (if using) and cook for another 3 to 5 minutes until crisp-tender.
  4. Add minced garlic to the skillet and cook for 30 seconds until fragrant. Return the seared steak and any accumulated juices to the pan, tossing everything together. If using soy sauce or coconut aminos, add it now and allow the flavors to meld for a minute or two.
  5. Transfer the dish to a serving plate and sprinkle with fresh parsley or cilantro if desired. Serve hot.

Notes

This dish can be served over quinoa or brown rice for a complete meal. For a low-carb option, consider using cauliflower instead of sweet potatoes.
