- 16 ounce mushrooms
- 1 tablespoon olive oil
- 2 tablespoon butter, divided
- 6 cloves garlic, minced
- 1 teaspoon kosher salt
- 1 1/2 teaspoon Worcestershire sauce
- 1 1/2 teaspoon soy sauce
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried tarragon
- 1/2 teaspoon black pepper
- 1/4 teaspoon chili powder
- 1/2 teaspoon browning sauce (like Gravy Master), optional
- Fresh chives, chopped, for garnish
Instructions
- Clean and prepare the mushrooms by gently wiping them with a damp cloth and trimming off any dry or discolored stem ends.
- Heat a medium skillet over medium heat and add the olive oil and 1 tablespoon of butter. Once the butter has melted, add the mushrooms and sprinkle them with kosher salt. Cook undisturbed for about 3 minutes.
- While the mushrooms are cooking, combine the paprika, onion powder, dried oregano, dried tarragon, black pepper, and chili powder in a small bowl.
- Once the mushrooms have developed a nice sear, add the minced garlic and the prepared spice mix to the skillet. Stir and continue cooking for an additional 1 to 2 minutes.
- If desired, stir in the browning sauce and cook for another 1 to 2 minutes.
- Pour in the Worcestershire sauce and soy sauce. Stir and allow the mushrooms to cook for another 2 to 3 minutes.
- Stir in the remaining 1 tablespoon of butter until melted and fully incorporated.
- Garnish with chopped chives before serving.
