Ingredients
- 2 pound red potatoes
- 1 cup mayonnaise
- 1/2 cup sour cream
- 2 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- 1/2 cup red onion, diced
- 1/2 cup crispy bacon, crumbled
- 1 cup cheddar cheese, shredded
- 1/4 cup fresh parsley, chopped
- 1/2 cup dill pickles, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. Boil the red potatoes until tender, then let cool slightly before cubing.
2. In a large bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, and Dijon mustard to create the creamy dressing.
3. Gently fold in the cooked potatoes, red onion, pickles, parsley, cheddar cheese, and most of the crumbled bacon.
4. Cover and refrigerate the salad for at least an hour to allow the flavors to meld.
5. When ready to serve, garnish with the remaining bacon and fresh chives or green onions if desired.
Notes
For a vegetarian option, omit the bacon and substitute a plant-based protein source.
