- 1 1/2 pound boneless, skinless chicken thighs
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1–2 tablespoon olive oil
- 1/3 cup apple cider
- 1/4 cup honey
- 1/4 cup water
- 2 apples, cut into matchsticks
- 1/2 cup diced celery
- 1/4 cup diced red onion
- 1 large carrot, peeled and finely grated
- 2 tablespoon mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- 1 garlic clove, finely minced
Instructions
- Preheat your oven to 425°F.
- Season the chicken thighs with salt, pepper, smoked paprika, and garlic powder.
- Heat the olive oil in a skillet over medium heat. Sear the chicken for 2-3 minutes per side until golden brown.
- In a small bowl, whisk together the apple cider, honey, and water. Pour this sauce over the chicken and let it simmer for 1-2 minutes.
- Transfer the skillet to the oven and bake for 10-12 minutes, or until the chicken reaches an internal temperature of 165°F. Let it rest for 10 minutes before slicing.
- While the chicken is baking, combine the apples, celery, red onion, and carrot in a bowl. Season with salt and pepper.
- In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, and minced garlic. Pour over the apple mixture and toss gently.
Notes
Serve the chicken over rice or mashed potatoes to soak up the sauce. The slaw can be served alongside or mixed with grains for a complete meal.
