Ingredients

Scale
  • 1 cup uncooked rice
  • 1 pound broccoli
  • 1 pound chicken breasts
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoon rice vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon sriracha
  • 1 tablespoon sesame oil
  • 1 teaspoon ground ginger
  • 1/2 cup mayonnaise
  • 1 tablespoon sriracha
  • 2 tablespoon water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • sesame seeds for garnish

Instructions

  1. Cook the rice: Prepare the rice according to the package instructions and set it aside.
  2. Prep the broccoli: Chop the broccoli into small florets and steam it in the microwave or on the stovetop until fork-tender. Set aside.
  3. Season the chicken: Cut the chicken breasts into bite-sized pieces and toss them with olive oil, salt, pepper, chili powder, smoked paprika, onion powder, and oregano.
  4. Cook the chicken: Heat a large skillet over medium-high heat and cook the seasoned chicken for 6-8 minutes, stirring occasionally, until golden brown and cooked through.
  5. Make the sticky sauce: In a small saucepan, combine the soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil, and ground ginger. Bring to a boil, then thicken with an arrowroot slurry, simmering for 4-5 minutes until the sauce reaches the desired consistency.
  6. Prepare the spicy mayo: Mix together the mayonnaise, sriracha, and water until smooth and pourable.
  7. Assemble the bowls: Layer the cooked rice, steamed broccoli, and chicken in individual bowls. Generously pour the sticky sauce over the chicken, then drizzle the spicy mayo on top. Sprinkle with sesame seeds for a beautiful finishing touch.
  8. Serve and enjoy: Dig in while the Sticky Chicken Bowls are hot and delicious!
