- 8 pieces boneless, skinless chicken thighs
- 1 can (20 ounce) pineapple tidbits, drained (reserve the juice)
- 1/2 cup pineapple juice
- 1/2 cup chicken stock
- 2 tablespoon soy sauce
- 2 tablespoon sesame oil
- 2 tablespoon brown sugar
- 2 tablespoon cornstarch
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 1/2 small yellow onion, peeled and diced
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Green onions, thinly sliced (for garnish)
Instructions
- Preheat the oven to 400°F.
- In a large bowl, whisk together the drained pineapple tidbits, pineapple juice, chicken stock, soy sauce, sesame oil, brown sugar, cornstarch, and garlic powder until well combined. Set aside.
- Season the chicken thighs generously with salt and pepper on both sides.
- Heat the olive oil in an oven-safe skillet over medium heat. Add the diced onion and the seasoned chicken thighs. Sear the chicken for 3-4 minutes per side until golden-brown.
- Pour the pineapple sauce over the seared chicken thighs. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened.
- Remove the skillet from the oven and let the chicken rest for 5 minutes. Serve warm, garnished with chopped parsley and sliced green onions.
