Description

Sticky Pineapple Chicken Thighs are a true standout. Juicy, tender chicken thighs are smothered in a sweet and savory sauce infused with the tropical tang of pineapple.


Ingredients

  • 8 pieces boneless, skinless chicken thighs
  • 1 can (20 ounce) pineapple tidbits, drained (reserve the juice)
  • 1/2 cup pineapple juice
  • 1/2 cup chicken stock
  • 2 tablespoon soy sauce
  • 2 tablespoon sesame oil
  • 2 tablespoon brown sugar
  • 2 tablespoon cornstarch
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1/2 small yellow onion, peeled and diced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Green onions, thinly sliced (for garnish)

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, whisk together the drained pineapple tidbits, pineapple juice, chicken stock, soy sauce, sesame oil, brown sugar, cornstarch, and garlic powder until well combined. Set aside.
  3. Season the chicken thighs generously with salt and pepper on both sides.
  4. Heat the olive oil in an oven-safe skillet over medium heat. Add the diced onion and the seasoned chicken thighs. Sear the chicken for 3-4 minutes per side until golden-brown.
  5. Pour the pineapple sauce over the seared chicken thighs. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened.
  6. Remove the skillet from the oven and let the chicken rest for 5 minutes. Serve warm, garnished with chopped parsley and sliced green onions.
