Ingredients
- 1 1/2 cup graham cracker crumbs

- 10 ounce white chocolate, melted (for coating)
- Optional: 1 drop pink or red food coloring
- Optional: Extra graham cracker crumbs or sprinkles (for topping)
Instructions
- In a bowl, mix the graham cracker crumbs, cream cheese, and powdered sugar until a thick dough forms. Gently fold in the diced strawberries, being careful not to overmix and crush the fruit.
- Refrigerate the mixture for 30 to 60 minutes, until it’s firm enough to roll into balls without losing its shape.
- Scoop and roll the chilled mixture into 1-inch balls, placing them on a parchment-lined tray as you go.
- Melt the white chocolate in a double boiler or the microwave, stirring frequently until it’s smooth and creamy. If desired, stir in a drop of pink or red food coloring to create a lovely blush hue.
- Carefully dip each truffle into the melted white chocolate, allowing the excess to drip off before placing it back on the parchment-lined tray. Sprinkle the coated truffles with extra graham cracker crumbs or colorful sprinkles before the chocolate sets. Chill the truffles for 20 to 30 minutes until the coating is firm.
