Ingredients
- 1 medium butternut squash
- 2 cup fresh spinach
- 1 cup crumbled feta cheese
- 4 ounce diced bacon
- 2 cloves minced garlic
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoon olive oil
- 1 teaspoon dried oregano
Instructions
1. Preheat the oven to 400°F.
2. Halve the butternut squash lengthwise and scoop out the seeds. Drizzle with olive oil and sprinkle with salt and pepper.
3. Place the squash cut-side down on a baking sheet and bake for 40-50 minutes until tender.
4. In a skillet, cook the diced bacon until crispy, about 5-7 minutes. Remove bacon, leaving drippings.
5. Sauté minced garlic and spinach in the same skillet until spinach wilts, about 3-4 minutes. Add cooked bacon, feta cheese, and oregano.
6. Flip the baked squash halves so flesh is up and fill with the mixture, pressing down gently.
7. Bake again for 15-20 minutes until heated through.
8. Let cool for a few minutes before serving.
Notes
For a leaner option, use turkey bacon or substitute with sautéed mushrooms or diced tofu.
Feel free to add other ingredients like quinoa or wild rice for variations.
