Delicious and Easy Sweet Chili Halloumi Wraps

- 1 cup halloumi cheese, sliced into 1/2-inch thick slices
- 4 tablespoon sweet chili sauce, plus extra for drizzling
- 4 soft flour tortillas
- 1 cup mixed bell peppers, sliced
- 1 cup cucumber, sliced
- 1 cup shredded cabbage or lettuce
- 1/2 cup grated carrot
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh cilantro or mint for garnish, optional
- Hummus or tzatziki for spreading, optional
Instructions
- Start by slicing the bell peppers and cucumber, and preparing the shredded cabbage or lettuce and grated carrot. Set these aside for later.
- In a large skillet, heat the olive oil over medium-high heat, getting it nice and hot and ready to sizzle.
- Add the halloumi slices to the hot pan and fry them for 2-3 minutes on each side until they’re golden brown. Halfway through the cooking process, add the minced garlic to the pan for an extra burst of flavor.
- Once the halloumi is nicely seared, pour the sweet chili sauce over the cheese and toss everything together, making sure the halloumi is completely coated. Let the sauce caramelize for an additional 1-2 minutes.
- While the halloumi is cooking, warm the flour tortillas in the microwave for 15-20 seconds, or heat them in a dry pan for a few seconds on each side to make them pliable and ready for wrapping.
- Spread a layer of hummus or tzatziki on each tortilla, if desired. Then, layer the shredded cabbage, sliced cucumber, grated carrot, and bell peppers. Top each wrap with the sweet chili halloumi slices.
- Drizzle extra sweet chili sauce over the top of the wraps, if you want an extra kick of flavor. Garnish with fresh cilantro or mint, if desired. Fold the wraps tightly and serve immediately, ensuring all the delicious components come together in each bite.
