Ingredients
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup coconut cream
- 1 large egg
- 2 tablespoon melted butter
- 1 teaspoon vanilla extract
- 1/4 cup shredded coconut (optional)
Instructions
1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
2. In a separate bowl, whisk the coconut cream, egg, melted butter, and vanilla until smooth.
3. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
4. If using shredded coconut, fold it in at this stage.
5. Heat a lightly greased skillet or griddle over medium heat.
6. Pour 1/4 cup of batter for each pancake and cook until bubbles form on the surface, then flip and cook until golden brown.
Notes
Serve warm drizzled with maple syrup and topped with toasted coconut or fresh tropical fruits.
