Savor the Tropics with Sweet Hawaiian Crockpot Chicken
Ingredients
- 2 pound boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1 cup diced pineapple
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/4 teaspoon black pepper
Instructions
1. In a bowl, whisk together the pineapple juice, soy sauce, brown sugar, minced garlic, ground ginger, and black pepper until well combined.
2. Place the chicken breasts in the slow cooker and pour the prepared sauce mixture over the top. Gently stir in the diced pineapple.
3. Cover the slow cooker and set it to cook on LOW for 5-6 hours or on HIGH for 3-4 hours.
4. Check for doneness using a meat thermometer; the chicken should reach an internal temperature of 165°F.
5. Serve the chicken whole or shred it directly in the crockpot, and serve over rice or cauliflower rice.
Notes
Optional additions: sliced green onions, red pepper flakes, chopped bell peppers, fresh cilantro or parsley, sesame seeds.
