Ingredients
- 1 pound ground turkey
- 2 cup cubed sweet potatoes
- 2 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary
- 1 medium onion, diced
- 1 cup vegetable broth
- 1/2 cup milk
- 1 cup cooked basmati rice
Instructions
1. Preheat the oven to 400°F.
2. Toss the cubed sweet potatoes with olive oil, salt, pepper, garlic powder, and rosemary. Spread on a baking sheet and roast for 30 minutes, stirring halfway.
3. In a skillet over medium heat, cook the ground turkey until browned and crumbled.
4. Add the diced onion to the skillet and cook until softened, about 5 minutes.
5. In a large mixing bowl, combine roasted sweet potatoes, ground turkey mixture, vegetable broth, milk, and cooked basmati rice. Mix well.
6. Transfer to a greased 9×13-inch baking dish, cover with foil, and bake for 25-30 minutes until heated through.
Notes
