Instructions
- Preheat your oven to 425°F.
- Scrub the sweet potatoes and prick each one several times with a fork. Place them in a baking dish or on a foil-lined oven rack and bake for 40-50 minutes, until very tender. Remove the potatoes from the oven and let them cool enough to handle, then peel off the skins.
- Reduce the oven temperature to 350°F and grease a 9×13-inch baking dish. In a large mixing bowl, combine the cooked sweet potatoes, milk, eggs, granulated sugar, melted butter, salt, vanilla extract, and cinnamon. Beat the mixture on medium speed for 3-4 minutes, until it’s smooth and creamy.
- Pour the sweet potato mixture into the prepared baking dish, spreading it out evenly. In a separate medium bowl, mix together the brown sugar, flour, and chopped pecans. Use your fingers to work the softened butter into the mixture, creating a crumbly topping. Sprinkle this pecan topping evenly over the sweet potato base.
- Bake the casserole for 40-45 minutes, or until the filling is set and the topping is golden and caramelized. Let the casserole cool for at least 10 minutes before serving.
