Roast Up a Delicious Sweet Potato Green Bean Tray Bake

- 2 sweet potatoes, peeled and cut into 1-inch cubes
- 8 ounce fresh green beans, trimmed and cut in half
- 2–3 tablespoon olive oil
- Salt and pepper, to taste
- 2 tablespoon brown sugar (optional, for sweetness)
- 1/2 teaspoon garlic powder or 2 garlic cloves, minced
- 1/2 teaspoon dried thyme or your favorite herbs
Instructions
- Preheat the oven to 425°F and lightly grease a large baking sheet.
- Wash, peel, and cube the sweet potatoes into bite-sized pieces. Wash and trim the green beans, then chop them in half for even cooking.
- Place the sweet potatoes and green beans on the prepared baking sheet. Drizzle with olive oil, then sprinkle with salt, pepper, brown sugar (if using), garlic powder, and dried thyme. Toss everything together until the veggies are evenly coated.
- Spread the seasoned veggies out in a single layer on the baking sheet.
- Pop that tray in the oven and roast for 20-25 minutes, stirring once midway, until the sweet potatoes are tender and the green beans are slightly crispy.
