It’s the perfect dessert for holidays, Sunday dinners, or whenever you need a comforting treat.

Ingredients

Scale
  • 1 cup mashed sweet potatoes

  • 1 cup granulated sugar

  • 1/2 cup packed brown sugar

  • 1/2 cup vegetable oil

  • 2 large eggs

  • 1 cup buttermilk

  • 2 teaspoons vanilla extract

  • 2 1/2 cups all-purpose flour

  • 1 tablespoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/2 teaspoon ground ginger

Instructions

  • Preheat Oven – Set oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.

  • Mix Wet Ingredients – In a large bowl, whisk together mashed sweet potatoes, granulated sugar, brown sugar, oil, eggs, buttermilk, and vanilla extract until smooth.

  • Combine Dry Ingredients – In a separate bowl, mix together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.

  • Blend Together – Slowly add the dry mixture to the wet mixture, stirring just until combined. Do not overmix.

  • Pour & Bake – Pour the batter into your prepared baking dish and smooth the top. Bake for 30–40 minutes or until a toothpick inserted in the center comes out clean.

  • Cool & Serve – Let the cake cool before slicing and serving. Enjoy!

Notes

  • For an extra glaze, drizzle with a powdered sugar icing while warm.

  • Use canned or freshly baked sweet potatoes—just ensure they’re fully mashed.

  • Spice it up with a pinch of cloves for added warmth.

  • Store leftovers covered at room temperature for up to 3 days or refrigerate for up to 5.
