Description

Sweet & Spicy Korean BBQ Meatloaf is a comforting and versatile dish infused with bold flavors of Korean barbecue.


Ingredients

  • 1 1/2 pound ground beef
  • 1/2 cup panko breadcrumbs
  • 1 large egg, lightly beaten
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoon gochujang (Korean chili paste)
  • 2 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 green onions, finely chopped
  • 1/4 cup gochujang for glaze
  • 2 tablespoon ketchup
  • 2 tablespoon brown sugar
  • 1 tablespoon soy sauce for glaze
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil for glaze

Instructions

1. Preheat Oven: To 350°F. Grease a loaf pan.

2. Prepare Meatloaf: In a large bowl, combine all meatloaf ingredients. Mix until just combined, being careful not to overwork the mixture.

3. Shape & Bake: Transfer the meatloaf mixture to the prepared loaf pan and shape it into a loaf. Bake for 45 minutes.

4. Prepare Glaze: In a small bowl, whisk together all the glaze ingredients.

5. Glaze & Finish Baking: Brush the glaze over the meatloaf and continue baking for an additional 15–20 minutes, or until the internal temperature reaches 165°F.

6. Serve: Allow the meatloaf to rest for 10 minutes before slicing. Enjoy the perfect balance of sweet and spicy Korean flavors!

Notes

For a healthier option, substitute leaner ground beef or turkey and reduce the amount of breadcrumbs and added sugars.
