Ingredients

- 1/2 pound ground sausage
- 1/2 sweet onion, diced
- 6 eggs
- 1/2 cup yogurt (Greek or any yogurt, or cottage cheese)
- Sea salt and black pepper, to taste
- 1 cup shredded cheese (cheddar or Mexican blend)
- 6 flour or corn tortillas, at room temp or warmed
- Olive oil or cooking spray
Instructions
- Sprinkle a little shredded cheese over one half of each tortilla.
- Add some of the cooked sausage and scrambled eggs, then top with more cheese.
- Fold the tortillas over to seal, creating a half-moon shape.
- Lightly drizzle or spray the tops of the folded tortillas with a bit of oil.
- Bake the tacos for 10-12 minutes, until they’re crispy and golden brown. For extra crispiness, place a second baking sheet on top while baking.
Notes
Serve warm with toppings like salsa, guacamole, or sour cream. Enjoy with coffee or a smoothie.
