Description

Tasty Baked Breakfast Tacos are savory pockets filled with sausage, eggs, and cheese, baked to perfection for a delicious breakfast.


Ingredients

  • 1/2 pound ground sausage
  • 1/2 sweet onion, diced
  • 6 eggs
  • 1/2 cup yogurt (Greek or any yogurt, or cottage cheese)
  • Sea salt and black pepper, to taste
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 6 flour or corn tortillas, at room temp or warmed
  • Olive oil or cooking spray

Instructions

  1. Sprinkle a little shredded cheese over one half of each tortilla.
  2. Add some of the cooked sausage and scrambled eggs, then top with more cheese.
  3. Fold the tortillas over to seal, creating a half-moon shape.
  4. Lightly drizzle or spray the tops of the folded tortillas with a bit of oil.
  5. Bake the tacos for 10-12 minutes, until they’re crispy and golden brown. For extra crispiness, place a second baking sheet on top while baking.
