- 1 pound breakfast sausage
- 2 tablespoon butter
- 1/4 cup all-purpose flour
- 2 cup whole milk
- Salt and black pepper to taste
- 4 large eggs
- 1/2–1 cup shredded cheddar cheese
- Chopped green onions or chives, optional
Instructions
- Preheat your oven to 425°F. Spread the tater tots in a single layer on a baking sheet and bake for 20–30 minutes, or until golden and crispy, following the package directions.
- While the tots are baking, brown the breakfast sausage in a large skillet over medium heat, breaking it into small crumbles. Cook until no pink remains.
- Add the butter to the cooked sausage and let it melt. Sprinkle the flour over the sausage and stir well, cooking for 1–2 minutes to form a roux.
- Slowly pour in the milk while whisking constantly to avoid lumps. Simmer, stirring often, until the gravy has thickened and become creamy. Season with salt and plenty of black pepper to taste. Reduce the heat to low to keep the gravy warm.
- In a separate pan, cook the eggs to your liking (fried or scrambled). Season them with salt and pepper.
- Divide the crispy tater tots among serving bowls. Top each with a portion of the sausage gravy, a cooked egg, and shredded cheddar cheese.
