Description

Texas Roadhouse Rattlesnake Bites are a spicy, cheesy appetizer featuring crispy panko coating and melty pepper jack cheese center.

Ingredients

Scale
  • 2 cup pepper jack cheese, shredded
  • 3 jalapeños, seeds removed and finely diced
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 1 1/2 cup panko breadcrumbs
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the shredded pepper jack cheese and diced jalapeños. Mix until evenly distributed.
  2. Scoop about 1 tablespoon of the cheese mixture and form it into a tight, 1-inch ball. Place on a parchment-lined baking sheet.
  3. Transfer the baking sheet to the freezer and let the cheese balls freeze for 30 to 45 minutes.
  4. Prepare a breading station with three bowls: one for all-purpose flour, one for the egg and milk mixture, and one for the seasoned panko breadcrumbs.
  5. Remove the frozen cheese balls from the freezer. Roll each ball in the flour, dip in the egg mixture, and coat with the seasoned panko breadcrumbs.
  6. In a deep pot or fryer, heat the vegetable oil to 350°F. Carefully add 6 to 8 breaded cheese balls at a time and fry for 3 to 4 minutes until golden brown.
  7. Using a slotted spoon, remove the fried Rattlesnake Bites from the oil and transfer to a paper towel-lined plate to drain excess oil. Serve hot with dipping sauces.

Notes

Serve with ranch dressing or a zesty Cajun-style sauce. Customize with different cheese varieties or spices.
