Description
Texas Roadhouse Rattlesnake Bites are a spicy, cheesy appetizer featuring crispy panko coating and melty pepper jack cheese center.

- 2 cup pepper jack cheese, shredded
- 3 jalapeños, seeds removed and finely diced
- 1 cup all-purpose flour
- 2 large eggs
- 1/4 cup milk
- 1 1/2 cup panko breadcrumbs
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- Vegetable oil for frying
Instructions
- In a large bowl, combine the shredded pepper jack cheese and diced jalapeños. Mix until evenly distributed.
- Scoop about 1 tablespoon of the cheese mixture and form it into a tight, 1-inch ball. Place on a parchment-lined baking sheet.
- Transfer the baking sheet to the freezer and let the cheese balls freeze for 30 to 45 minutes.
- Prepare a breading station with three bowls: one for all-purpose flour, one for the egg and milk mixture, and one for the seasoned panko breadcrumbs.
- Remove the frozen cheese balls from the freezer. Roll each ball in the flour, dip in the egg mixture, and coat with the seasoned panko breadcrumbs.
- In a deep pot or fryer, heat the vegetable oil to 350°F. Carefully add 6 to 8 breaded cheese balls at a time and fry for 3 to 4 minutes until golden brown.
- Using a slotted spoon, remove the fried Rattlesnake Bites from the oil and transfer to a paper towel-lined plate to drain excess oil. Serve hot with dipping sauces.
Notes
Serve with ranch dressing or a zesty Cajun-style sauce. Customize with different cheese varieties or spices.
