- 4 pieces boneless skinless chicken breasts
- 1/2 cup Italian dressing
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 medium yellow onion, thinly sliced
- 8 ounce mushrooms, sliced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 cup shredded Monterey Jack cheese
- 4 slices bacon, cooked and crumbled (optional)
- Chopped parsley (for serving, optional)
Instructions
- Marinate: Place the chicken and Italian dressing in a bowl or bag. Marinate for 30 minutes (or up to 8 hours).
- Cook Chicken: Heat the olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade and cook for 5 to 6 minutes per side, until cooked through (165°F). Transfer the chicken to a plate.
- Sauté Veggies: Reduce the heat to medium. Add the butter, then the onions and mushrooms. Cook for 6 to 8 minutes, until softened and browned. Season with salt, pepper, and garlic powder.
- Smother: Return the chicken to the skillet. Spoon the onions and mushrooms over each piece of chicken. Top with the Monterey Jack cheese (and the bacon, if using).
- Melt Cheese: Cover the skillet and cook for 2 to 3 minutes, until the cheese melts.
- Serve: Garnish with chopped parsley, if desired, and serve the Texas Roadhouse–Style Smothered Chicken hot.
Notes
