Description
A classic comfort food dish featuring tender chicken, sautéed mushrooms, and a rich, velvety sauce.
Ingredients
- 4 pieces boneless, skinless chicken breasts, cut into strips
- 2 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 8 ounce mushrooms, sliced
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup chicken broth
- 1 tablespoon Dijon mustard
- 1 cup sour cream
- 2 tablespoon fresh parsley, chopped (optional)
Instructions
1. Heat the olive oil in a large skillet over medium heat. Add the chicken strips and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
2. In the same skillet, add the onion and garlic. Cook until softened, about 2 minutes. Then, add the mushrooms and continue cooking until they’re tender, about 3-4 minutes.
3. Stir in the paprika, salt, and pepper. Cook for an additional minute to allow the spices to bloom and infuse the vegetables.
4. Pour in the chicken broth and Dijon mustard, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a simmer.
5. Reduce the heat to low and stir in the sour cream. Return the cooked chicken to the skillet and cook until heated through, about 2-3 minutes.
6. Garnish with fresh parsley, if desired. Serve over egg noodles, rice, or mashed potatoes.
Notes
For a healthier option, you can use low-fat sour cream or Greek yogurt and serve it over whole-grain egg noodles or cauliflower rice.
