Ingredients
- 3–4 boneless chicken breasts
- 1 cup whole buttermilk
- 1 tablespoon hot sauce (optional, for added flavor)
- 1 1/2 cup all-purpose flour
- 1 tablespoon cornstarch
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil for deep frying
- 4 brioche buns
- 8–12 dill pickle slices
- 1/2 cup mayonnaise (regular or spicy)
Instructions
1. Marinate the chicken by combining buttermilk and hot sauce (if using) in a bowl. Add chicken breasts, cover, and refrigerate for at least 1 hour or overnight.
2. Prepare the breading mixture by whisking together flour, cornstarch, Cajun seasoning, garlic powder, paprika, salt, and black pepper in a separate bowl.
3. Heat about 2 inches of vegetable oil in a deep skillet or heavy pot to 350°F. Dredge marinated chicken in the breading mixture, pressing it onto the surface.
4. Fry the chicken for 4-6 minutes per side until golden brown and cooked through. Drain on paper towels.
5. Toast brioche buns in a dry skillet or oven until warm and lightly golden. Spread mayonnaise on the bottom bun, add dill pickle slices, place fried chicken on top, and cap with the top bun.
