- 1/4 cup sour cream
- 2 tablespoon chopped fresh chives
Instructions
- Preheat air fryer to 400°F.
- Scrub the russet potatoes clean under running water and pierce them in several spots with a fork.
- Place potatoes in the air fryer basket and cook for about 35-40 minutes until tender.
- Once cooked, remove potatoes, cool slightly, slice in half lengthwise, and scoop out some flesh.
- In a small bowl, combine melted butter with minced garlic, salt, and black pepper.
- Brush the mixture over the potato skins.
- Return potato skins to the air fryer and cook for another 5-7 minutes until crispy.
- Sprinkle shredded cheddar cheese and bacon bits into the potato skins and air fry for an additional 3-5 minutes until cheese is melted.
- Drizzle tops with sour cream and sprinkle fresh chives before serving.
Notes
For extra crunch, consider airing the potato skins prior to brushing with the butter mixture.
You can customize flavors by adding jalapeños or trying different cheeses like gouda.
