- 4 large russet potatoes
- 8 slices bacon
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Wash and scrub the russet potatoes to remove any dirt, then pat them dry with a towel.
- Set your air fryer to 400°F and preheat for about 5 minutes.
- Prick several holes in each potato with a fork, place them in the air fryer basket, and cook for approximately 35-40 minutes, turning halfway through.
- While the potatoes are cooking, fry the bacon until crispy, drain on paper towels, and crumble into bite-sized pieces.
- Allow the potatoes to cool slightly, then cut them in half lengthwise and scoop out some flesh, leaving a thin layer.
- Brush the insides of each potato half with olive oil and sprinkle with garlic powder, salt, and black pepper.
- Place the potato halves back into the air fryer, skin side up, and cook for about 5-7 minutes until golden and crispy.
- Remove the potato skins from the air fryer, fill each half with shredded cheddar cheese and crumbled bacon, then return them to the air fryer for an additional 3-5 minutes until the cheese is melted.
- Top with sour cream and chopped green onions before serving.
Notes
For optimal crispiness, preheat the air fryer before adding the skins, avoid overcrowding the basket, and brush the insides well with olive oil.
