Amish Oatmeal Rhubarb Bars are a delightful dessert combining the tangy flavor of rhubarb with a nutty oatmeal crust, creating a satisfying and memorable treat.

- 2 cup old-fashioned rolled oats
- 1 1/2 cup all-purpose flour
- 1 cup unsalted butter, room temperature
- 1 cup brown sugar, packed
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 3 cup fresh or frozen rhubarb, finely chopped
- 1 1/2 cup granulated sugar
- 2 tablespoon cornstarch
- 1/4 cup water
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F. Grease or spray a 9×13 inch baking pan.
- In a heavy saucepan over medium-high heat, combine chopped rhubarb, granulated sugar, cornstarch, and water. Stir frequently for about 15 minutes until thickened.
- In a large mixing bowl, mix together unsalted butter, oats, all-purpose flour, brown sugar, salt, and baking soda until crumbly.
- Reserve about 1 1/3 cup of the oatmeal mixture for topping, then press the remaining mixture firmly into the bottom of the prepared baking pan.
- Once the rhubarb mixture has thickened, remove from heat and stir in vanilla extract. Allow to cool for about 10 minutes.
- Spread the cooled rhubarb filling evenly over the pressed oatmeal crust. Sprinkle reserved oatmeal crumble across the top.
- Bake for 30 to 40 minutes until golden brown and firm around the edges.
- Allow to cool completely in the pan for at least 30 minutes before slicing into squares.
Notes
Serve warm with vanilla ice cream or whipped cream. Pairs well with tea or coffee.
