Description

Bacon Cheeseburger Stuffed Potato Skins are crispy, savory delights that combine the flavors of a classic cheeseburger in a potato skin form. Perfect for sharing or indulging alone.


Ingredients

  • 4 large russet potatoes
  • 8 slices bacon, cooked and crumbled
  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced pickles
  • 1/4 cup mayonnaise
  • 2 tablespoon ketchup
  • 2 tablespoon mustard
  • 2 tablespoon chopped green onions

Instructions

  1. Preheat oven to 400°F.
  2. Pierce russet potatoes several times with a fork and bake for 45-60 minutes until tender.
  3. Brown ground beef in a skillet over medium heat, adding garlic powder, onion powder, salt, and pepper. Drain excess fat.
  4. Cut baked potatoes in half and scoop out insides, mixing with ground beef and half of the cheddar cheese.
  5. Spoon beef-and-potato mixture back into potato skins.
  6. Top with remaining cheddar cheese, crumbled bacon, diced tomatoes, and sliced pickles.
  7. Bake filled potato skins for another 15-20 minutes until cheese is melted and tops are golden.
  8. Mix mayonnaise, ketchup, and mustard in a small bowl for sauce.
  9. Garnish baked potato skins with chopped green onions and drizzle with sauce. Serve warm.
