Description

Blueberry Cheesecake Cookies are the perfect combination of soft, chewy cookie goodness and the creamy, rich flavor of cheesecake, all wrapped around juicy blueberries. These scrumptious cookies are ideal for any occasion, whether you’re entertaining guests, baking for a special event, or simply indulging yourself.

Ingredients

Scale
  • 2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 4 ounce cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, combine softened unsalted butter, cream cheese, and granulated sugar. Beat on medium speed until light and fluffy, about 3 minutes.
  4. Crack in the egg and pour in the vanilla extract. Mix until combined.
  5. Gradually fold the dry ingredients into the wet mixture until a soft dough forms.
  6. Gently fold in the blueberries and white chocolate chips if using.
  7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 12 to 14 minutes or until edges are set and tops look glossy.
  8. Let cookies cool on the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

For soft cookies, ensure butter and cream cheese are softened but not melted. Store cooled cookies in an airtight container for up to a week. You can freeze the dough for later use.
