  • 3 tablespoon brown sugar
  • 2 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic, minced
  • 1/2 teaspoon Dijon mustard
  • 1 teaspoon cornstarch
  • 1 tablespoon water

Instructions

  1. Pat pork chops dry with paper towels and drizzle both sides with olive oil. Season with salt, black pepper, smoked paprika, and garlic powder.
  2. In a small saucepan, combine bourbon, brown sugar, soy sauce, apple cider vinegar, minced garlic, and Dijon mustard. Bring to a gentle simmer over medium heat, stirring occasionally, until reduced by about one-third.
  3. In a small bowl, whisk together cornstarch and water until smooth. Slowly drizzle into the simmering glaze while stirring constantly until thickened.
  4. Preheat grill to medium-high heat. Place seasoned pork chops on the grill and cook for approximately 4 to 5 minutes per side until internal temperature reaches 145°F.
  5. During the last 2 to 3 minutes of cooking, brush glaze over both sides of the pork chops and flip to caramelize.
  6. Remove from grill and let rest for 5 minutes before serving with remaining glaze.

Notes

Select bone-in pork chops for enhanced flavor or thick-cut boneless varieties. Consider marinating for 30 minutes to 4 hours for better flavor penetration.
