Chewy sugar cookies are a classic treat that combine the perfect balance of crisp edges and a soft, chewy center.
Ingredients
- 1 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1 2/3 cup white sugar
- 1 large egg
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
Instructions
1. Preheat your oven to 350°F. Line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the all-purpose flour, cornstarch, baking soda, and salt.
3. In a large bowl, beat the unsalted butter and 1 2/3 cup of white sugar until light and fluffy.
4. Beat in the egg, egg yolk, vanilla extract, and almond extract (if using) until well combined.
5. Gradually beat the flour mixture into the butter mixture, mixing just until incorporated.
6. Pour the remaining 1/3 cup of white sugar onto a plate. Scoop the dough into 1-tablespoon balls, roll them in the sugar, and place them 2 inches apart on the prepared baking sheets.
7. Bake one sheet at a time on the middle rack of the preheated oven for 8-10 minutes, or until the tops of the cookies look set.
8. Allow the cookies to cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.
Notes
Store baked cookies in an airtight container at room temperature for up to 5 days.
Freeze baked cookies in an airtight container for up to 3 months.
Scoop dough into balls, roll in sugar, and freeze for up to 3 months.
