- 1 tablespoon olive oil

- 6 cup chopped romaine lettuce
- 3/4 cup Parmesan cheese, grated or shaved
- 1 to 2 cup croutons
- 1/2 to 1 cup mayonnaise or Caesar dressing
- 1 anchovy fillet or 3/4 teaspoon anchovy paste
- 1 garlic clove, minced
- 2 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 2 to 4 tablespoon milk or water, as needed
- Black pepper, to taste
Instructions
- Season the chicken breasts with olive oil, salt, and black pepper.
- Grill or pan-cook the chicken for 5 to 7 minutes per side until cooked through.
- Slice the cooked chicken into bite-sized pieces.
- In a bowl, whisk together the mayonnaise, anchovy (or anchovy paste), garlic, lemon juice, Dijon mustard, and Worcestershire sauce.
- Gradually add milk or water until the dressing reaches the desired consistency. Season with black pepper.
- In a large bowl, combine the chopped romaine, Parmesan cheese, and croutons.
- Add the sliced chicken and drizzle the dressing over the top.
- Toss the salad gently until everything is evenly coated.
- Serve immediately, garnishing with additional Parmesan or black pepper if desired.
Notes
For a lighter version, reduce the amount of dressing or use a lighter mayonnaise.
You can substitute different types of lettuce or proteins for variations.
