Ingredients

  • 1 pound boneless skinless chicken breasts
  • 2 ciabatta rolls
  • 1/2 cup pesto
  • 4 ounce fresh mozzarella cheese
  • 1 cup arugula
  • 1 medium tomato

Instructions

  1. Slice the chicken breasts in half horizontally and season with salt, black pepper, and garlic powder.
  2. Cook the chicken by grilling over medium heat until fully cooked and browned, or in a skillet over medium heat until golden-brown.
  3. Brush the insides of the ciabatta rolls with olive oil and toast until lightly golden.
  4. Place a slice of fresh mozzarella cheese on top of each piece of cooked chicken to melt.
