- 1 tablespoon soy sauce

- 1/4 teaspoon baking soda (optional, for extra tenderness)
- 1 tablespoon soy sauce
- 1 1/2 tablespoon oyster sauce
- 1/2 tablespoon hoisin sauce
- 1 teaspoon dark soy sauce (or regular soy sauce)
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1/2 tablespoon Shaoxing wine
- 1 tablespoon cornstarch
- 1/2 cup water
- 1 large white onion, sliced
- 4 green onions, cut into 2-inch pieces (white and green parts separated)
- 4 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 tablespoon vegetable oil for cooking
Instructions
- Combine the marinade ingredients: soy sauce, Shaoxing wine, water, sesame oil, cornstarch, and baking soda in a bowl. Add the beef and mix well. Let marinate for at least 15 minutes.
- In a small bowl, whisk together the stir fry sauce ingredients: soy sauce, oyster sauce, hoisin sauce, dark soy sauce, sugar, sesame oil, Shaoxing wine, cornstarch, and water.
- Heat a wok or large skillet over high heat. Add 1 tablespoon of vegetable oil. Add the marinated beef in a single layer and sear for 2 to 3 minutes until browned but not fully cooked. Remove the beef from the pan and set aside.
- Add the remaining oil to the wok. Toss in the ginger, garlic, and white parts of the green onions. Stir-fry for about 30 seconds until fragrant.
- Add the sliced white onion and stir-fry for 3 to 5 minutes until softened and slightly caramelized.
- Return the seared beef to the wok. Pour in the stir fry sauce and toss everything together until the sauce thickens and becomes glossy, about 1 to 2 minutes.
- Add the green parts of the green onions and give it one last stir to incorporate them.
