  • 1 lb beef (flank steak, sirloin, or ribeye), thinly sliced
  • 1 tablespoon soy sauce
  • 1/2 tablespoon Shaoxing wine (or rice vinegar)
  • 2 tablespoon water
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 1/4 teaspoon baking soda (optional, for extra tenderness)
  • 1 tablespoon soy sauce
  • 1 1/2 tablespoon oyster sauce
  • 1/2 tablespoon hoisin sauce
  • 1 teaspoon dark soy sauce (or regular soy sauce)
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 1/2 tablespoon Shaoxing wine
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 1 large white onion, sliced
  • 4 green onions, cut into 2-inch pieces (white and green parts separated)
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoon vegetable oil for cooking

Instructions

  1. Combine the marinade ingredients: soy sauce, Shaoxing wine, water, sesame oil, cornstarch, and baking soda in a bowl. Add the beef and mix well. Let marinate for at least 15 minutes.
  2. In a small bowl, whisk together the stir fry sauce ingredients: soy sauce, oyster sauce, hoisin sauce, dark soy sauce, sugar, sesame oil, Shaoxing wine, cornstarch, and water.
  3. Heat a wok or large skillet over high heat. Add 1 tablespoon of vegetable oil. Add the marinated beef in a single layer and sear for 2 to 3 minutes until browned but not fully cooked. Remove the beef from the pan and set aside.
  4. Add the remaining oil to the wok. Toss in the ginger, garlic, and white parts of the green onions. Stir-fry for about 30 seconds until fragrant.
  5. Add the sliced white onion and stir-fry for 3 to 5 minutes until softened and slightly caramelized.
  6. Return the seared beef to the wok. Pour in the stir fry sauce and toss everything together until the sauce thickens and becomes glossy, about 1 to 2 minutes.
  7. Add the green parts of the green onions and give it one last stir to incorporate them.
