- 1 1/2 pound boneless skinless chicken breasts
- 2 tablespoon olive oil
- 1 lime, zested and juiced (divided)
- 1/3 cup minced fresh cilantro
- 1 clove garlic, crushed
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 1/2 cup cooked jasmine rice (warm)
- 1/3 cup minced fresh cilantro
- 1 teaspoon lime zest
- 1 tablespoon lime juice
- Salt and pepper, to taste
- 1 large avocado, pitted, peeled and sliced
- 1 tablespoon lime juice
- 1/4 teaspoon salt
- 1 cup grape tomatoes, halved
- Fresh cilantro leaves for garnish
- Lime wedges
Instructions
- In a large bowl, whisk together the lime juice, olive oil, 1/3 cup of cilantro, salt, pepper, and garlic until well combined.
- Add the chicken to the marinade, making sure each piece is well coated. Cover the bowl and chill in the refrigerator for about 1 hour.
- Preheat your broiler. Place the marinated chicken on a broiling rack set over a pan. Broil on high for about 8 minutes, then flip the chicken and broil for an additional 8-10 minutes, or until the chicken is cooked through with an internal temperature of 165°F. Let the chicken rest for 10 minutes before slicing.
- While the chicken is resting, stir the warm cooked jasmine rice with the lime zest and the remaining 1/3 cup of cilantro. Season well with salt and pepper to taste.
- In a small bowl, toss the sliced avocado with lime juice and a pinch of salt.
- Divide the cilantro lime rice evenly among plates. Place one chicken breast on each plate, along with a quarter of the avocado slices and a quarter of the halved tomatoes.
- Garnish with fresh cilantro leaves and lime wedges. Serve immediately.
