- 12 ounce penne pasta
- 6 slices bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 large eggs
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 1 cup mozzarella cheese, shredded
- 2 tablespoon chopped fresh parsley
Instructions
- Preheat your oven to 350°F.
- In a large pot, boil the penne pasta in salted water until al dente, then drain and set aside.
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and drain on paper towels.
- In the same skillet, add the diced onion and sauté until soft. Stir in the minced garlic and cook for an additional minute.
- In a separate bowl, whisk together the eggs, heavy cream, grated Parmesan cheese, black pepper, and salt until smooth.
- In a large bowl, toss the cooked pasta with the crispy bacon, sautéed onion, garlic, and creamy egg mixture until well coated.
- Pour the pasta mixture into a greased baking dish and sprinkle the shredded mozzarella cheese on top.
- Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven, allow to cool slightly, and garnish with freshly chopped parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave or bake in the oven at 350°F until warmed through.
