Description

Creamy Buffalo Chicken Mac and Cheese Casserole is a delightful dish that combines creamy textures with bold flavors to create a meal that’s sure to please family and friends alike.

Ingredients

Scale
  • 2 cup cooked rotini pasta
  • 2 cup shredded cooked chicken
  • 1 cup buffalo sauce
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup ranch dressing
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup blue cheese crumbles (optional)
  • Chopped green onions for garnish

Instructions

  1. Preheat oven to 350°F.
  2. Bring a large pot of salted water to a boil and add the rotini. Cook according to package instructions until al dente, then drain and set aside.
  3. In a large mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, ranch dressing, garlic powder, onion powder, salt, and black pepper. Stir well until everything is nicely blended and the cream cheese is smoothly incorporated.
  4. Gently fold the cooked rotini into the chicken mixture, making sure every piece of pasta is coated in that creamy goodness.
  5. Fold in the shredded cheddar and mozzarella cheeses, setting aside a small portion for the topping.
  6. Pour your mixture into a generously greased 9×13 inch casserole dish. Ensure it’s spread out evenly for uniform cooking.
  7. Sprinkle the reserved cheddar and mozzarella on top, then add blue cheese crumbles if desired.
  8. Bake for about 25-30 minutes until bubbly and golden brown on top.
  9. Remove from the oven and let it cool for a few minutes. Garnish with chopped green onions before serving.

Notes

Allow the casserole to cool completely before transferring it to an airtight container. It can be stored in the fridge for up to 4 days.

Microwave individual servings for quicker meals, or reheat the entire casserole in the oven at 350°F for about 15-20 minutes until heated through.
