Description

Creamy Cucumber Shrimp Salad is a refreshing summer dish that combines juicy shrimp, crisp cucumbers, tangy red onions, and a creamy herby dressing.


Ingredients

  • 1 pound shrimp
  • 2 cup cucumbers, diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup green onions, sliced
  • 1/2 cup celery, diced (optional)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoon fresh dill, chopped
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Bring a pot of salted water to a boil. Gently add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Drain and transfer to an ice bath to stop cooking.
  2. In a small bowl, whisk together the mayonnaise, sour cream, lemon juice, lemon zest, dill, Dijon mustard, garlic, salt, and pepper until smooth and creamy.
  3. In a large mixing bowl, combine the chopped shrimp, diced cucumbers, sliced red onion, green onions, and celery. Pour the dressing over and gently toss until evenly coated.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled.

Notes
