- 1 pound shrimp
- 2 cup cucumbers, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup green onions, sliced
- 1/2 cup celery, diced (optional)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 tablespoon lemon juice
- 1 tablespoon lemon zest
- 2 tablespoon fresh dill, chopped
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Bring a pot of salted water to a boil. Gently add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Drain and transfer to an ice bath to stop cooking.
- In a small bowl, whisk together the mayonnaise, sour cream, lemon juice, lemon zest, dill, Dijon mustard, garlic, salt, and pepper until smooth and creamy.
- In a large mixing bowl, combine the chopped shrimp, diced cucumbers, sliced red onion, green onions, and celery. Pour the dressing over and gently toss until evenly coated.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled.
Notes
This salad can be served as a light main dish, side for barbecues, or appetizer with crackers. It pairs well with white wine or rosé.
