  • 2 pound Yukon Gold potatoes
  • 1 tablespoon paprika
  • 1 tablespoon dried basil

  • 1 tablespoon dried rosemary
  • 1 tablespoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoon olive oil
  • 2 tablespoon butter
  • 1 medium onion, minced
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F.
  2. Season the chicken thighs with paprika, basil, oregano, thyme, rosemary, parsley, salt, and black pepper.
  3. Heat olive oil in a large oven-safe skillet over medium heat and sear the chicken for 3 to 4 minutes per side until golden-brown.
  4. Add halved or chunked Yukon Gold potatoes to the skillet and cook for about 8 minutes, stirring occasionally.
  5. In a separate pan or the same skillet, melt butter over medium heat. Add minced onion and cook until softened, then stir in garlic.
  6. Sprinkle in flour and cook for about a minute, stirring constantly.
  7. Gradually whisk in chicken broth, followed by heavy cream, milk, and Parmesan cheese. Stir in chopped parsley.
  8. Return the seared chicken to the skillet over the partially cooked potatoes and pour the creamy garlic sauce over everything.
  9. Transfer the skillet to the oven and bake for 35 to 40 minutes until chicken is fully cooked and potatoes are tender.
