- 2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup milk
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat oven to 400°F.
- Season the chicken thighs with paprika, basil, oregano, thyme, rosemary, parsley, salt, and black pepper.
- Heat olive oil in a large oven-safe skillet over medium heat and sear the chicken for 3 to 4 minutes per side until golden-brown.
- Add halved or chunked Yukon Gold potatoes to the skillet and cook for about 8 minutes, stirring occasionally.
- In a separate pan or the same skillet, melt butter over medium heat. Add minced onion and cook until softened, then stir in garlic.
- Sprinkle in flour and cook for about a minute, stirring constantly.
- Gradually whisk in chicken broth, followed by heavy cream, milk, and Parmesan cheese. Stir in chopped parsley.
- Return the seared chicken to the skillet over the partially cooked potatoes and pour the creamy garlic sauce over everything.
- Transfer the skillet to the oven and bake for 35 to 40 minutes until chicken is fully cooked and potatoes are tender.
