- 4 large russet potatoes, diced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning

- 1/2 teaspoon black pepper
- 2 tablespoon olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F.
- Season the chicken breasts generously with salt, pepper, and Italian seasoning.
- In a large skillet, heat olive oil over medium heat. Add the chicken and cook for 5-6 minutes on each side until golden brown.
- In a large mixing bowl, combine the diced russet potatoes, heavy cream, minced garlic, and half of the grated parmesan cheese. Stir until well-mixed.
- In a baking dish, spread out the creamy potato mixture evenly, and place the sautéed chicken breasts on top.
- Sprinkle the remaining grated parmesan cheese over both the chicken and potatoes.
- Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for another 15 minutes, or until golden and bubbling.
- Before serving, sprinkle fresh parsley on top.
