  • 4 boneless, skinless chicken breasts
  • 4 large russet potatoes, diced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F.
  2. Season the chicken breasts generously with salt, pepper, and Italian seasoning.
  3. In a large skillet, heat olive oil over medium heat. Add the chicken and cook for 5-6 minutes on each side until golden brown.
  4. In a large mixing bowl, combine the diced russet potatoes, heavy cream, minced garlic, and half of the grated parmesan cheese. Stir until well-mixed.
  5. In a baking dish, spread out the creamy potato mixture evenly, and place the sautéed chicken breasts on top.
  6. Sprinkle the remaining grated parmesan cheese over both the chicken and potatoes.
  7. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for another 15 minutes, or until golden and bubbling.
  8. Before serving, sprinkle fresh parsley on top.
