Description

Creamy Garlic Parmesan Chicken and Potato Skillet is the perfect dish for those hectic weeknights when you crave something comforting yet easy to prepare. This one-pan meal features succulent chicken breasts seeping in a rich and creamy garlic sauce, perfectly complemented by crispy, golden potatoes.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 medium potatoes, diced
  • 3 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, pour in the olive oil and turn on the heat to medium. Season your chicken breasts generously with salt and pepper. Once the oil is glistening, gently place the seasoned chicken into the skillet. Let it cook undisturbed for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken and set it aside to rest.
  2. Using the same skillet, toss in the diced potatoes and sauté them in the remaining oil. Stir occasionally over the next 10-12 minutes until they’re golden and fork-tender.
  3. Add the minced garlic to the skillet and stir it in for about a minute until fragrant. Pour in the heavy cream, followed by the Parmesan cheese and Italian seasoning. Stir everything together until smooth and creamy.
  4. Add the chicken back to the skillet, coating each piece in the creamy sauce. Heat for an additional 2-3 minutes to allow the chicken to soak in some of the flavors from the sauce. Garnish with fresh parsley before serving.

Notes

Choose chicken breasts that are of similar size for even cooking. Opt for waxy potato varieties like Yukon Golds for a beautiful texture. You can add veggies such as spinach or broccoli in the last few minutes of cooking. Consider incorporating spices like cayenne or red pepper flakes for a kick.
