Description

Crispy Air Fryer Cheesy Potato Skins are a delicious snack that combines comfort food with a healthy cooking method, perfect for game days, parties, or a cozy night in.


Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 4 slices crispy bacon, crumbled
  • 1/4 cup sour cream
  • 2 green onions, chopped
  • 1 teaspoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat air fryer to 400°F.
  2. Wash and dry the russet potatoes thoroughly.
  3. Prick each potato several times with a fork.
  4. Place the potatoes in the air fryer basket and cook for 35-40 minutes until tender.
  5. Remove the potatoes and let them cool for a few minutes.
  6. Cut each potato in half lengthwise and scoop out some of the flesh.
  7. Brush the insides of the potato skins with olive oil.
  8. Sprinkle garlic powder, salt, and black pepper on the insides of the skins.
  9. Arrange the potato skins in the air fryer basket skin side up.
  10. Air fry for 5-7 minutes until golden and crispy.
  11. Sprinkle shredded cheddar cheese and crumbled bacon into each potato skin.
  12. Return the potato skins to the air fryer and cook for an additional 3-5 minutes until cheese is melted.
  13. Garnish with sour cream and chopped green onions before serving.

Notes

For extra crispiness, ensure potatoes are fully baked before crisping them in the air fryer. Store leftovers in an airtight container in the refrigerator.
