Crispy Bacon Wrapped Kielbasa Bites are an unforgettable appetizer that combines savory sausage and crunchy, caramelized bacon, enhanced by a sweet and smoky brown sugar glaze.

- 1 pound smoked kielbasa sausage, cut into 1-inch pieces
- 12 slices center-cut bacon, cut in half
- Toothpicks for securing
- 1 1/2 cup dark brown sugar, packed
- 3 tablespoon Dijon or stone-ground mustard
- 3 tablespoon apple cider vinegar
- 1 teaspoon black pepper
- 1 teaspoon chili powder
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat oven to 375°F and line a large baking sheet with aluminum foil. Place a wire rack on top and spray it with non-stick cooking spray.
- In a small saucepan, combine brown sugar, mustard, apple cider vinegar, black pepper, and chili powder over medium heat. Stir until the sugar dissolves and keep warm on low heat.
- Wrap one half slice of bacon around each piece of kielbasa and secure with a toothpick.
- Brush each bacon-wrapped kielbasa bite with the brown sugar glaze on all sides and arrange them in a single layer on the prepared rack.
- Bake for 40 to 45 minutes, basting with extra glaze every 10 to 15 minutes until the bacon is charred around the edges.
- Remove from oven and let cool for about 10 minutes before serving.
Notes
For best results, use thinly sliced bacon and do not overcrowd the bites on the rack for optimal crispiness.
