Description

Crispy Cheesy Stuffed Mashed Potato Nests are a delightful and versatile dish that will have your taste buds dancing with joy. These savory bites combine the comforting flavors of mashed potatoes with the irresistible gooiness of melted cheese, all wrapped up in a crispy shell.


Ingredients

  • 4 large russet potatoes
  • 1 large egg
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 2 tablespoon butter, melted
  • 2 tablespoon all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Cooking spray or oil for muffin tin
  • 1 cup shredded mozzarella cheese

Instructions

  1. Boil the peeled and cubed potatoes in salted water for 15 to 20 minutes, or until they are fork-tender. Drain the potatoes well and mash them until smooth and creamy.
  2. Allow the mashed potatoes to cool for about 5 minutes, then stir in the egg, cheddar cheese, Parmesan cheese, milk, melted butter, flour, salt, and pepper until the mixture is thick and scoopable.
  3. Preheat your oven to 400°F and grease a muffin tin. Spoon the potato mixture into each cup, pressing up the sides to form a nest with a well in the center.
  4. Place the muffin tin in the preheated oven and bake the potato nests for 20 to 25 minutes, or until they are golden brown and crisp on the edges.
  5. Once the potato nests have baked, add a spoonful of the shredded mozzarella cheese into the center of each nest.
  6. Return the nests to the oven for an additional 3 to 5 minutes, or until the cheese has melted and is gooey.

Notes
